This Orange Cupcake Recipe is a real favorite as they are so easy to make as everything, including the orange, goes in the food processor.
The oils in the orange rind these orange cupcakes remain very moist and keep well for several days. Because you process all the ingredients in the food processor, the texture is a little denser than a cupcake that has had the butter and sugar creamed together. However, it doesn't feel 'heavy' to eat.
I often add a couple of tablespoons of poppy seeds to the mixture to give it a little extra texture and flavor.

Line cupcake trays with liners.
Place the orange, sugar, butter and eggs in the food processor and process until the orange is finely chopped.
Add the flour and process until just combined.
Add poppy seeds.
Spoon the cake mixture into prepared trays.
Bake for 12-15 minutes or until a skewer inserted in the center of an orange and poppy seed cupcake comes out clean.
Put on wire rack to cool.
Top with cream cheese frosting.
