Cupcake Cookies

The cookies are ideal for birthday parties when the guests can decorate their own as a party game or take one home that you have prepared earlier.

Follow the recipe for butter biscuits.

Make up a quantity of royal icing and divide into small bowls according to the number of colors you will be using for the cupcake-shaped cookies.

Decorate and top with sprinkles as desired. Use the royal icing to pipe names of your guests on each cupcake biscuit if you are giving them out as a party favor.

If you are make cookies for party favors, wrap each cupcake cookie in cellophane and tie with colored ribbon.

If you want the butter biscuits all the same size, it is best to buy a cookie cutter. I have found two different cupcake-shaped cutters and have used them both. The one with the candle is more suitable for birthdays but they can both be used for any occasion.
