Recipe for delicious Apple Cupcakes. I have fond memories of mom making these cupcakes when I was a small girl. We loved them and were always asking her to make more. They are great anytime, however, especially delicious, when still warm.
If you don't have time to stew a couple of apples, use store-bought apples. I tend to keep tins of stewed baby apples in the pantry so that I can make these apple cupcakes any time.
The stewed fruit seems to keep the cupcakes really moist and they keep well for a few days.

Place butter, flour, sugar, eggs, milk and vanilla essence in small bowl of electric mixer and beat until combined.
Place cupcake liners in tray.
Place a tblspn of mixture in each liner.
Using a dampened teaspoon, make a small indentation in the top of each, and into it put 1-2 tspns of stewed apple.
Cover each with a spoonful of the remaining cupcake batter.
Bake for 12-15 minutes.
Cupcakes can either be dusted with icing sugar or frosted with lemon glace frosting.
