Apple Cupcakes

Recipe for delicious Apple Cupcakes. I have fond memories of Mom making these cupcakes when I was a small girl. We loved them and were always asking her to make more. They are great anytime, however, especially delicious, when still warm.

This is a very easy cupcake recipe that my kids now love. It's great to see them enjoying my favorite childhood recipes. We always called them Apple Blossom Cupcakes but I really don't know where or why they were called that! A friend of Mom's gave her the recipe and we just kept using that name. We now just refer to them as apple cupcakes.

If you don't have time to stew a couple of apples, use store-bought apples. I tend to keep tins of stewed baby apples in the pantry so that I can make these apple cupcakes any time.

The stewed fruit seems to keep the cupcakes really moist and they keep well for a few days.

Ingredients:

  • 2oz (60g) butter
  • 1 1/4 cups Self raising flour
  • 1/2 cup sugar
  • 2 eggs
  • 1/4 cup milk
  • 1 tsp vanilla essence
  • stewed apple

Preparation:

  • Preheat oven to 400F (220C).
  • Place butter, flour, sugar, eggs, milk and vanilla essence in small bowl of electric mixer and beat until combined.
  • Place cupcake liners in tray.
  • Place a tbsp of mixture in each liner.
  • Using a dampened teaspoon, make a small indentation in the top of each, and into it put 1-2 tspns of stewed apple.
  • Cover each with a spoonful of the remaining cupcake batter.
  • Bake for 12-15 minutes.
  • Cupcakes can either be dusted with icing sugar or frosted with lemon glace frosting.
