Vegan Cupcake

This is a really easy vegan cupcake recipe that my sister makes for her daughter who has recently become a vegan. We all love it.

1-1/2 cups self-raising flour
1/3 cup custard powder
1 cup sugar
1/3 cup vegetable oil
1 tablespoon lemon juice
2 teaspoons vanilla essence
1 cup cold water

Preheat oven to 350F (180C).

Line cupcake trays with cupcake papers.

Sift together flour and custard powder and stir in sugar.

In a separate bowl combine oil, lemon juice and vanilla and add to the dry ingredients.

Whisk, gradually adding the cold water to the mixture and continue beating until the batter is smooth and well combined.

Spoon mixture into cupcake trays.

Bake for 15-20 minutes or until a skewer inserted in the center of a cupcake comes out clean.

Cool in trays for 5 minutes before turning onto a wire rack to cool completely.
