Vegan Chocolate Cupcakes

My son has a dairy allergy so I searched everywhere for cupcake recipes that he could enjoy. These vegan chocolate cupcakes are perfect for vegans and anyone with a dairy allergy. Now I make these all the time and he doesn't miss out on birthday cake and always feels like he is part of the celebrations.

3 cups all-purpose (plain) flour
1/2 cup cocoa powder
2 teaspoons bicarbonate of soda
2 cups sugar
2 cups cold water
2 tablespoons white vinegar
2/3 cup vegetable oil
2 teaspoons vanilla essence

Preheat oven to 350F (175C).

Line cupcake trays with cupcake papers.

Sift together flour, cocoa and bicarbonate of soda and stir in sugar.

In a separate bowl combine water, vinegar, oil and vanilla essence.

Pour wet ingredients into sifted flour mixture and stir until well combined.

Spoon mixture into cupcake trays.

Bake for 20-25 minutes or until a skewer inserted in the center of a cupcake comes out clean.

Cool in trays for 5 minutes before turning onto a wire rack to cool.

I can imagine how happy you and your son were when you found this recipe as it would be really hard on a small child to not be able to enjoy cupcakes and cake like everyone else.

It would be hard on a big kid too!!
