Sugar paste


I made the sugar paste recipe you suggested. It seems to turn out fine until I start to roll and cut. It becomes crumbly. It does colour nicely. Any help for me??


I would suggest that you keep adding a few drops of boiling water to the sugarpaste until it has got back to being a nice pliable consistency.

Make sure that the fondant is wrapped tightly in cling film to prevent drying out.

Turn out onto a work surface dusted with icing sugar (confectioners sugar) and knead until smooth and pliable, adding more icing sugar as necessary to prevent sticking. You will need to knead it for several minutes. If it is still sticky, add sifted sugar until it reaches the right consistency.

But, will not adding water make it sticky? Do you use icing sugar when you roll it out?
