Sour Cream Frosting

I use sour cream frosting with lots of my cakes and cupcakes.

2oz (60g) butter, softened
1/2 cup sour cream
1 teaspoon vanilla essence
1 teaspoon lemon juice
3 cups confectioners (icing) sugar

Place butter, sour cream vanilla essence and lemon juice in a small bowl and beat with an electric mixer until well combined.

Gradually add confectioners sugar until mixture is smooth and suitable for spreading or piping.

You may need more or less confectioners sugar depending on the consistency you want to add gradually until you get it right.
