Red Velvet Cake

This is my favorite red velvet cake or cupcake recipe.

I know you already have a few red velvet recipes on your site, but this one is slightly different in ingredients and quantities.

2 cups all-purpose (plain) flour
1 tablespoon baking powder
1/2 cup cocoa
1-1/2 cups granulated sugar
7oz (200g) butter, melted
2 eggs
1 cup buttermilk
1 tablespoon vanilla extract
1 tablespoon red food coloring

Preheat oven to 325F (160C).

Line cupcake trays with cupcake papers.

Sift flour, baking powder and cocoa into a medium-sized bowl and stir in sugar.

In a separate bowl combine melted butter, eggs, buttermilk, vanilla and food coloring.

Pour wet ingredients into dry ingredients and stir until mixture is well combined.

Spoon mixture into cupcake trays.

Bake for 20-25 minutes or until a skewer inserted in the middle of a cupcake comes out clean.

Makes about 15 cupcakes, depending on the size.
