I made these orange cupcakes last week as a friend gave me her recipe. They were tasty and really moist.
4oz (125g) butter
1 tbsp finely grated orange rind
1 cup caster sugar
1/2 cup fresh orange juice
2 cups almond meal (ground almonds)
1 cup self-raising flour
2 tbsp orange juice, extra
2 cups icing sugar, sifted
2 tsp grated orange rind, extra
Preheat oven to 325F (160C).
Beat butter, orange rind and sugar in the bowl of an electric mixer and beat until light and fluffy.
Gradually add eggs, one at a time, and beat well after each addition.
Gently stir through orange juice, almond meal and flour.
Spoon mixture into cupcake trays, lined with cupcake papers.
Bake for 20-25 minutes or until golden brown.
Cool on a wire rack and frost with orange icing.
Combine extra orange juice, icing sugar and extra rind and mix until smooth.
