This is my family's favorite recipe for lemon cupcakes. They are very quick and easy to make and keep really well.
6 tablespoons oil
2/3 cup sugar
1 1/4 cups all-purpose (plain) flour
1 teaspoon baking powder
1 1/2 cups confectioners (icing) sugar
Preheat oven to 320F (160F).
Line cupcake trays with cupcake papers.
Whisk eggs, oil and juice of one lemon in a bowl and gradually add sugar, stirring until dissolved.
Sift flour and baking powder and add to egg mixture, stirring until well combined.
Spoon mixture into cupcake trays.
Bake for approx 20 minutes or until a skewer inserted in the middle of a cupcake comes out clean.
Leave in tray for 5 minutes before turning onto a wire rack to cool.
When cold frost with lemon frosting.
Mix juice of remaining lemon with confectioners sugar and stir until combined.
