Gluten-free Apple Cupcakes

Gluten-free apple cupcakes are easy to make. These gluten-free cupcakes are similar to a muffin in texture.

What is gluten? Gluten is the sticky stuff which helps prevent your baked goodies from crumbling. It also traps pockets of air, improving the texture of your cupcakes. In this recipe gluten has been replaced with xanthum gum, which is readily available from health food stores and Celiac Societies.

1 3/4 cups sugar
3 eggs
1 cup oil
2 cups gluten-free flour
1 tspn cinnamon
1 tspn baking soda
1 tspn salt
1 tspn vanilla essence
1 tspn xanthum gum
2 cups chopped apple
1 cup chopped nuts

1. Preheat oven to 185C (375F).

2. Line cupcake trays with cupcake papers.

3. Combine sugar, eggs and oil and mix until creamy.

4. Sift together flour, cinnamon, baking soda and salt and mix into egg mixture, together with vanilla essence and xanthum gum.

5. Fold in apple and nuts.

6. Bake for 20-25 minutes.
