Easy Vanilla Icing

This is the best recipe for an easy vanilla icing. It is suitable for most cakes,cupcakes and biscuits and does not involve using the mixer.

The ingredients are pantry basics so I can make this icing with a moment's notice.

2 cups powdered (icing) sugar
2 tablespoons butter or margarine, softened
2 tablespoons milk
1/2 teaspoon vanilla

Combine ingredients in a small bowl and mix with a fork until smooth and fluffy.

If you want chocolate icing, you can add 1 tablespoon of cocoa to the other ingredients.

Great recipe but...

This is an amazing recipe, however I had to add more milk and vanilla. This recipe calls for 2 tbsp of milk, and I had to add 1 tsp extra of milk to make this recipe more smooth. With just adding the recommended amount of milk, it was like working with clay. I actually put a dent in my palm from trying to stir. Other than its a great recipe. Its easy and quick and tastes really good.

I made cupcakes but didn't have any frosting on hand. Decided to Google it and saw this site. What's best is that this did not require a mixer. Perfect since I didn't want to take it out and clean it again. Mixed by hand and the icing came out great!
