Easy Cupcake recipe

This is a really simple recipe that doesn't even need an electric mixer. This easy cupcake recipe is perfect for the children to make.

2 1/4 cups self-raising flour
1 1/4 cups caster sugar
1/2 cup vegetable oil
1 cup milk
2 eggs
2 tsp vanilla essence

Preheat oven to 350F (180C).

Line cupcake tray with paper liners.

Mix together flour and sugar and stir in oil, milk, eggs and vanilla.

Beat mixture until well combined.

Spoon mixture into cupcake trays and bake for 15-20 minutes or until golden.

Turn onto wire rack to cool.

Frosting:
400g nutella
1/4 cup light cream cheese
1/2 cup thickened whipped cream.

Whisk together the nutella and cream cheese and then gently fold in the whipped cream.
