Dairy Free Frosting

4oz (125g) soy or olive spread

16oz (500g) confectioners (icing) sugar
3oz (90g) cocoa powder
3fl oz (90ml) soy or rice milk
2 teaspoons vanilla essence

Beat the soy or olive spread in a small bowl of an electric mixer until light and fluffy.

Add half of the sifted confectioners sugar and cocoa and half of the milk and beat until light and fluffy and the color has lightened.

Add remaining ingredients.

Continue beating until all ingredients are well combined and the mixture is smooth and spreadable.

In place of soy or olive spread, you can use any dairy-free spread alternative.

Just made your frosting. I only had olive spread left. This recipe was fantastic! Soooo yummy! Made myself a little ill as I ate the remainder :-S very very nice!! X
