Cream Cheese Frosting Recipe

4oz (125g) butter, softened

14oz (400g) cream cheese, room temperature
2 teaspoons lemon juice
6 cups confectioners (icing) sugar

Cream the butter with an electric mixer for 2-3 minutes.

Add the cream cheese and lemon juice and beat for a minute until ingredients are well combined.

Add half of the sifted confectioners sugar and beat until the mixture is light and fluffy.

Add the remaining confectioners sugar and continue beating until the mixture is light and of a spreadable consistency. You will need to continually scrape down the side of the bowl to ensure that all ingredients are well beaten.

If the mixture is too stiff you will need to add more milk. If it is too runny, add extra confectioners sugar until it is of a spreadable consistency.
