Crazy Cupcakes

I call these my crazy cupcakes as I let the children at the daycare where I work go crazy and color them however they want. They come up with some amazing color combinations.


The cupcakes always taste great so the look can be quite deceptive!!

1-1/2 cups self-raising flour, sifted
2/3 cup superfine (caster) sugar
4oz (125g) butter
3 eggs
2fl oz (60ml) milk
food coloring

Preheat the oven to 350F (175C).

Line cupcake trays with cupcake papers.

Beat the flour, sugar, butter, eggs and milk with an electric mixer until mixture is smooth and well combined (approx 3-4 minutes).

A few drops of food coloring can be added to the entire mixture or mixture can be divided into 2,3 or 4 bowls and a couple of drops of different food coloring added to each bowl.

If only using one color, spoon the mixture into cupcake trays. If using more than one color, fill cupcake paper to three-quarter full with the combined mixture and using a knife swirl through the mixture to give a marbled effect.

Bake for 18-20 minutes or until a skewer inserted in the center of a cupcake comes out clean.

Leave to cool in tins for 5 minutes before turning onto a wire rack to cool completely.

Frost with your choice of icing or sprinkle with sifted confectioners sugar.

I can only imagine what colors the children choose!! No two cupcakes would ever look the same.

For frosting you could use one color or you could use a couple of colors and give that a marbled effect as well.
