Cookie Monster Cupcakes

I have always been a fan of Sesame Street and couldn't wait to try these Cookie Monster cupcakes.

What you need:
12 cupcakes
Coconut
White Marshmallows or white chocolate buttons
Frosting
Chocolate chips
Blue food coloring
12 cookies (I used choc chip)

Directions:
For the eyes, cut marshmallows in thirds, put a dab of white frosting as adhesive and place a chocolate chip in the center. If using white chocolate buttons attach a chocolate chip with frosting.

To color the coconut, mix coconut with food coloring, gradually adding more until desired color is achieved.

Frosting should be the same color as the coconut, so mix food coloring into white frosting adding more until you achieve the desired color.

Frost the cupcake and then coat with coconut.

Put white frosting on the edge of the eyes (as adhesive) and place in the center of the cupcake.

Make a cut nearly half way through the cupcake and gently separate and place cookie inside.
