Chocolate Apple Cupcakes

A friend gave me the recipe for Chocolate Apple Cupcakes years ago and it is still a family favorite. This is a really easy cupcake recipe to follow as everything goes in the food processor together.

These chocolate apple cup cakes are literally made in seconds and can either be frosted or dusted with icing sugar.

butterfly cupcakes with chocolate frosting and coconut 185g butter, chopped
1 1/4 cups (275g) castor sugar
3 eggs
2 cups (300g) self-raising flour
1/3 cup (35g) cocoa
1/4 tspn bicarb soda
1/3 cup (80ml) water
2 medium apples, peeled, cored and finely chopped.

1. Preheat oven to 160C (350F).

2. Place cupcake liners in tray.

3. Combine all ingredients in large bowl of a food processor and blend until well combined, scraping down the side of the container occasionally.

4. Spoon into cupcake trays.

5. Bake for 15 minutes or until a skewer inserted in the center of a chocolate apple cupcake comes out clean.

6. Stand for 5 minutes before turning on to wire rack to cool.
