Caramel Cupcakes

I don't know where I got this recipe for caramel cupcakes but I have had it for several years. The grated apple, walnuts and raisins make for a great tasting cupcake.

3/4 cup all-purpose (plain) flour
1/2 cup self-raising flour
1 1/2 cups brown sugar, firmly packed
1 1/2 teaspoons cinnamon
1 teaspoon vanilla essence
2oz (60g) butter, softened
3 eggs, lightly beaten
2 apples, grated
4oz (120g) walnuts or pecans, chopped
1/2 cup raisins, chopped

Preheat oven to 375F (190C).

Combine sifted flours, sugar, cinnamon, essence, butter and eggs in small bowl of electric mixer and beat for about 3 minutes or until mixture is smooth and pale in color.

Stir in apples, nuts and raisins and mix until combined.

Line cupcake trays with cupcake papers. Pour mixture into prepared liners. Bake for about 15-17 minutes or until cooked when tested.

Stand in trays for 5 minutes and then turn onto wire rack to cool.

Dust caramel cupcakes with sifted icing sugar.

This will be my favorite recipe of Caramel Cupcakes. It was not that complicated and I definitely liked cupcakes!
