I love to give each Halloween guest a candy cupcake.
2-1/2oz (75g) butter, softened
1/2 tspn vanilla essence
1/3 cup (75g) superfine/castor sugar
1 cup (150g) self-raising flour
2 tbsp. milk
Preheat oven to 350F (180C).
Line baking tray with cupcake liners.
Beat butter, sugar, eggs, vanilla essence, sifted flour and milk, on low speed, with an electric mixer until ingredients are well combined.
Beat for a further 2-3 minutes on medium until mixture is pale in color.
Spoon mixture into cupcake trays.
Bake for approximately 15 minutes.
Remove trays from oven and gently press boiled lollies onto cupcakes.
Return to oven and bake for a further 5 minutes until the lollies have melted and cupcakes are golden brown.
Leave to cool in tray for a few minutes before turning onto a wire rack to cool completely.
