This recipe for Black Bottom Cupcakes is a family favorite.
1 1/2 cups all-purpose (plain)flour
1 1/2 cups sugar
1/4 cup cocoa
1 tspn vinegar
1 tspn vanilla
1 tspn baking soda
1/2 tspn salt
1/3 cup vegetable oil
1 cup water
8 oz (250g) cream cheese
6oz (185g) chocolate chips
1 egg
Whisk together 1 cup sugar, vanilla and oil. In another bowl, mix together the flour, baking soda, salt and cocoa. Gradually, add the dry ingredients to the sugar, vanilla and oil mixture. Add water slowly and stir well.
Soften the cream cheese and beat together with remaining sugar (1/2 cup) and egg. Mix until well blended. Gently stir in chocolate chips.
Fill cupcake tins 1/3 full with the batter and top with a dollop of the cream cheese mixture.
Bake at 350F (175C)for 20 minutes
