Berry Cupcakes

Berry Cupcakes can be made using any frozen berry. Choose your favorite berry to add to this fluffy, moist cupcake.

I love blueberries but have also used strawberries and raspberries in this really quick and easy cupcake recipe.

You will find that these cupcakes never last long in the house - they are yummy!

Ingredients:

  • 1 cup extra light olive oil
  • 3 eggs
  • 3/4 cup caster sugar
  • 3 tsp vanilla essence
  • 2 1/2 cups self-raising flour
  • 3/4 cup milk
  • 1 cup frozen berries

Preparation:

  • Preheat oven to 160C (325F).
  • Line cupcake trays with cupcake papers.
  • Place oil, eggs, caster sugar and vanilla essence in a bowl and whisk to combine.
  • Add half the sifted flour and half the milk and stir to combine.
  • Add remaining milk and flour and combine.
  • Spoon mixture into cupcake trays and sprinkle with frozen berries of your choice.
  • Bake for 20 minutes or until a skewer inserted in the center of a berry cupcake comes out clean.
  • Stand in trays for 5 minutes before turning onto a wire rack to cool.
  • When cool, dust with sifted icing sugar.
