Berry Cupcakes

chocolate cupcake with chocolate frosting and shredded coconut These berry cupcakes are really moist and fluffy. I love blueberries but have also used strawberries and raspberries in this recipe.

Quick and easy to make - you'll find these berry cup cakes don't last long. They are yummy!

1 cup extra light olive oil
3 eggs
3/4 cup caster sugar
3 tspns vanilla essence
2 1/2 cups self-raising flour
3/4 cup milk
1 cup frozen berries

1. Preheat oven to 160C (325F)

2. Line cupcake trays with cupcake papers

3. Place oil, eggs, caster sugar and vanilla essence in a bowl and whisk to combine.

4. Add half the sifted flour and half the milk and stir to combine.

5. Add remaining milk and flour and combine.

6. Spoon mixture into cupcake trays and sprinkle with frozen berries of your choice.

7. Bake for 20 minutes or until a skewer inserted in the center of a berry cupcake comes out clean.

8. Stand in trays for 5 minutes before turning onto a wire rack to cool.

9. When cool, dust with sifted icing sugar.
