Spice Cake with Cinnamon Frosting

Spice Cake
3 eggs
3/4 cup castor sugar
1 1/2 cups self-raising flour (whole wheat flour)
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1 teaspoon ground cloves
1 teaspoon ground cardamon
125g butter, melted
1/3 cup milk
1/2 teaspoon ground cinnamon, extra

Beat eggs and sugar in a small bowl with an electric mixer and beat until thick and creamy. Fold in the sifted dry ingredients and the combined melted butter and milk in two batches.

Line cupcake trays with cupcake liners. Pour mixture into prepared cake trays and bake in a moderate over for about 15-17 minutes or until cooked when tested.

Leave in trays for 5 minutes before turning onto a wire rack to cool.

Spread cupcakes with frosting and sprinkle extra ground cinnamon over top.

Cinnamon Frosting
30g butter
60g cream cheese
1 1/2 cups icing sugar (powdered sugar) sifted
1/4 teaspoon ground cinnamon

Beat all ingredients in a small bowl with electric mixer and beat until light and fluffy.
