Orange and Poppy Seed Cupcakes

These orange and poppy seed cupcakes are so easy to make as everything, including the orange, goes in the food processor.

Because of the oils in the orange rind these orange and poppy seed cup cakes remain very moist and keep well for several days.

orange and poppy seed cupcakes 1 orange, quartered, cored and seeds removed
220g caster sugar
125g melted butter
2 eggs
225g self raising flour
2 tblspn poppy seeds

1. Preheat oven to 180 degrees.

2. Line cupcake trays with liners

3. Place the orange, sugar, butter and eggs in the food processor and process until the orange is finely chopped.

4. Add the flour and process until just combined.

6. Spoon the cake mixture into prepared trays.

7. Bake for 12-15 minutes or until a skewer inserted in the center of an orange and poppy seed cupcake comes out clean.

8. Put on wire rack to cool.

9. Ice with cream cheese frosting.
