Mini Teacakes

This recipe for mini teacakes, or cinnamon cupcakes, is just the cupcake version of the old-favorite - Cinnamon teacake.

mini teacakes Teacakes are the perfect afternoon tea treat. Fresh from the oven, it is impossible to limit yourself to just one cinnamon cupcake!

60g butter
1/2 cup caster sugar
1 egg
1tspn vanilla essence
1 cup self-raising flour
1/3 cup milk
15g butter, extra
1 tblspn caster sugar, extra
1 tspn cinnamon

1. Preheat oven to 190C (375F).

2. Line cupcake trays with cupcake papers.

3. Cream butter, sugar, egg and vanilla essence until light and creamy.

4. Stir in sifted flour and milk and beat lightly until smooth.

5. Spoon mixture into cupcake trays.

6. Bake for 10 minutes.

7. Brush tops with extra melted butter and sprinkle with combined sugar and cinnamon.

These cinnamon cupcakes are delicious served warm with butter.
