Caramel Apple Cake

3/4 cup plain flour
1/2 cup self-raising flour
1 1/2 cups brown sugar, firmly packed
1 1/2 teaspoons cinnamon
1 teaspoon vanilla essence
60g butter, softened
3 eggs, lightly beaten
2 apples, grated
120g walnuts or pecans, chopped
1/2 cup raisins, chopped

Combine sifted flours, sugar, cinnamon, essence, butter and eggs in small bowl of electric mixer and beat for about 3 minutes or until mixture is smooth and pale in color.

Stir in apples, nuts and raisins and mix until combined.

Line cupcake trays with cupcake papers. Pour mixture into prepared liners. Bake in a moderate over for about 15-17 minutes or until cooked when tested.

Stand in trays for 5 minutes and then turn onto wire rack to cool.

Dust with sifted icing sugar.
