Apple Blossom Cupcakes

I have fond memories of mom making Apple blossom cupcakes when I was a small girl. We loved these little stewed apple cupcakes and were always asking her to make more. Apple blossom cup cakes are great anytime, however, especially delicious, when still warm. This really is an easy cupcake recipe.

60g butter
1 1/4 cups Self raising flour
1/2 cup sugar
2 eggs
1/4 cup milk
1 tspn vanilla essence
stewed apple

1. Preheat oven to 220 degrees.

2. Place butter, flour, sugar, eggs, milk and vanilla essence in small bowl of electric mixer and beat until combined.

3. Place cupcake liners in tray.

4. Place a tblspn of mixture in each liner.

5. Using a dampened teaspoon, make a small indentation in the top of each, and into it put 1-2 tspns of stewed apple.

6. Cover each with a spoonful of the remaining cupcake batter.

7. Bake for 12-15 minutes.

Cupcakes can either be dusted with icing sugar or frosted with lemon glace frosting.

If you don't have time to stew a couple of apples, use store-bought apples. I tend to keep tins of stewed baby apples in the pantry so that I can make these apple cupcakes any time.

The stewed fruit seems to keep the cupcakes really moist and they keep well for a few days.
